Pandan Fudge Cake wit Yam Paste

I baked quite often after moving to new house =P i must say big 'THANK U' to my sis, bcos she is the 1 who helped me to try all my work n even finished watever i baked whether tasty or not.. i must say she is a very PRO "white mouse"..hahahaha

Last week, she request me to help her prepare a birthday cake for a friend, to thank the support she has, I put more effort on it, searching for a good recipe online n finally I decided to make a pandan fudge cake which i like it most..:)




My 2nd tried for pandan fudge cake, this time i add on the yam paste.. the yam is perfectly matching with the pandan..=)







I used some leftover filling to made an extra cup =)

Chocolate Mousse Cake

Yeah, finally I get to squeeze in some time to do a post of a recent chocolate mousse cake I made.. my first attempt for "chocolate mousse" =P




I spend almost 3hrs to prepare this "Chocolate Mousse Cake"... ('',)..I think i need to attend some cake courses, especially on cake decorating. It's always easy and fun to self-taught and learn as you experience failures but the process of learning is longer. I wanna learn how to bake beautiful cakes! Anyone wanna join me? :P














Recipe for the chocolate mousse: 20g egg yolks / 30g sugar / 80ml melted butter / 150g dark chocolate (melted) / 250ml whipped cream


Whisk the egg yolk and sugar on a double boiler until pale in color and thicken. Mix in the melted butter.
Add the melted dark chocolate to the egg yolk mixture, mix until well combine.
Fold in the whipped cream into the chocolate mixture.


** I use normal sponge cake recipe to made the chocolate sponge cake..

Birthday Cake for my sis













Ingredients for Sponge cake:
4 eggs
100 gm cake flour
100 gm castor sugar
12 gm spongecake stabliser
25 gm milk
90 gm melted butter

Yam Fillings:

500 gm. Yam - steam and mashed into puree
100 gm. sugar
300 gm. coconut milk
100 gm. whipped cream

Methods:

To make sponge cake:
Put all the ingredients except the melted butter into a mixing bowl.
Beat everything on high for at least 7 mins until ribbon stage. This means that if you use your whisk with batter to write an "8" on the batter won't sink in but will appear visible for a while. This will be the right constitency for your batter. Add in melted butter at this stage and mix in thoroughly.

Pour batter into 8" round pan and bake it in a preheated oven at 190C for about 35 mins. When done, remove the cake from the cup immediately and leave it on wire rack to cool.

To make filling:
1. sugar over medium heat till sugar is dissolved. Add in yam puree, coconut milk. Stir till almost dry. Leave to cool.
2. Place 1 layer of sponge cake onto a cake board.
3. Spread 300 gm. yam mixture on top and spread till evenly distributed.
4. Cover the yam mixture with a layer of sponge cake.
5. Spread cake with 100 gm. of whipped cream.
6. Cover with the 3rd layer of sponge cake.
7. Deco with whipped creams n fruits.
8. Chill in fridge.

Durian Ice-Cream



I've been crazy making all kind of durian taste for cake recently. bcos its was in season now! hehe =P hmmm... this time i tried Durian Ice-Cream... happy with the outcome =)







Ingredient A:
400g Durian fresh (blend to a paste using blender)

Ingredients B:
350g Whipping cream
30g coffee creamer
50g icing sugar

Method:
1. Place ingredient B in mixing bowl, blend evenly at low speed with ball shape whisker. Change to high speed and continue to whisk til creamy.

2. Add blended durian flesh (ingredient A) and mixed til well-combined.

3.Pour mixture into container and freeze in the freezer for 5 hours or overnight.
